D...Jenn - it's really just a spreadable confit. Duck rillettes are my favorite. A nice trick if the pork isn't fatty enough is to use additional duck fat on the pork rillette. I also want to make a lamb one, but I'll have to work through my pork first....<br /><br />Oh, and that pork is so tasty! I grew up on pork, and once I moved here I couldn't eat it anymore.
